Grape and Avocado Dip (or Salad)
Yesterday, I found an enticing recipe with grapes and avocados as the main ingredients. Being a huge fan of grapes and avocados, I would never have thought to put them together, but they are the perfect match. The mix can be served over a bed of lettuce to make a salad or with chips as a dip. I served the mix with hint of lime corn chips and the result was fantastic.

I made some slight modifications to the recipe to meet my needs. First, I cut most of the ingredients in half in order to serve 2 people instead of 4. Second, I left out the anaheim pepper because my local grocery store doesn’t sell them.
Here’s my update to the recipe:
- 1 1/2 cups red seedless grapes, cut in thirds
- 1 avocado diced
- 1/4 sweet red pepper, diced
- 1/6 cup sweet onion, diced
- 2 tablespoons cilantro, chopped
- 2 tablespoons lime juice
- 2 cloves of garlic, pressed
- Salt and pepper, to taste
Mix all ingredients together, cover, and chill for one hour. Serve and enjoy!

Very interesting your idea ! Sounds healthy and tasty! But is not very light ! Lol
